Ingredients for Fennel Gin

  1. London Dry Gin 
  2. Fennel Leaves

Ingredients for Cocktail

  1. Fennel infused Gin
  2. Campari 
  3. Sweet Vermouth 
  4. Herbal Bitters (Optional) 

Fennel Negroni

Method for Fennel Gin

  1. Rinse the Fennel in water to clean.
  2. Cut off the Fennel leaves from the main vegetable, you will need two handfuls. 
  3. Tip out some of the Gin into a separate container allowing room for the Fennel leaves to be inserted. 
  4. Add two handfuls of Fennel leaves into the bottle of Gin, making sure all leaves are submerged underneath the Gin.
  5. Taste daily to allow for personal preference.
  6. Shake daily. 

Method for Cocktail

  1. Fill a mixing jug with cubed ice.
  2. Add 25ml of Fennel infused Gin.
  3. Add 25ml of Campari.
  4. Add 25ml Sweet Vermouth.
  5. Stir the liquid within the ice for around 20 seconds. 
  6. Fill a whisky glass with cubed ice. 
  7. Strain out the cocktail over the ice within the glass, only allowing the liquid to escape from the mixing jug. 
  8. With a peeler, peel orange zest from an orange. 
  9. Trim and twist the orange zest into a spiral and place on top of the cocktail.
